I’ve been trying to not workout since my back injury…. it sucks. 

But i’ve been feeling better and i’ve had this beautiful bike sitting in my living room for about 2 years now. sad, i know. But I finally took it down to the bike shop to pump the tires… i had no idea how to, had to ask for help… haha but got my tires pumped and rode it down to the Charles! 

it felt amaaazzzinnnggg! it was only a 10minute bike ride, but it felt sooo goood to be able to be active and sweat a little!

Primal nut bars

With all this time off and confinement to the apartment, I’ve taken it upon myself to read more books, stay up-to-date with the world, … study…., and work on my paleo baking and cooking skilllzzz! 

So, i tried my hand at a primal nut bar. I read up on a bunch of different ways to make a nut bar and tweaked it to my tastings and likings. A nut bar is essential what it’s called. it’s made out of a bunch of different nuts and you can add fruit, coconut, protein, chocolate chips… whatever you want! I first tried the non-baking just refrigerate-way like cave woman cafe, but they didn’t hold well. So i added an egg to the mixture like marks daily apple and put it in the oven @ 325°F x16 minutes. they’re still a little crumbly-ish, BUT it still tastes good. So when i’m done gobbling these up, ill just have to try again!

My Primal Nut Bar

  • 1c slivered almonds
  • 1c walnuts
  • 1/2c sunbutter
  • 1/2c unsweetened shredded coconut
  • 1/2c coconut oil
  • 1/4c honey
  • 2 tsp vanilla extract
  • 1/2 tsp salt
  • 1c +extra dried fruit (apricots)
  • 1/2c wheat germ + flax seed

Pick a fruit or fruits you want in your bars. I personally love dried apricots in the bars so I chopped up a cup + extra of apricots.

Take the whole nuts and toast ’em @ 350°F until they brown. But be careful, they go from brown to black, fast! Let them cool and then grind them to coarse 

      cheat tip: if you end up baking them, then dont worry about toasting… OR just grab more nut flour because you’re                           essentially making more nut flour by grinding them.. 

Mix the nut flour, shredded coconut and more nut flour together.

Add the nut butter, coconut oil, and honey to the mixture. I pressed it into a pan and for the refrigerate method: refrigerated x 3 hrs.

Then I added an egg and mixed it altogether and baked it in the oven for about 16-18 minutes @ 325°F. 

Let it cool before you cut into it. They actually hold together pretty good… until you eat ’em haha 

meaty little chicken thighs

i am not a fan of chicken, especially chicken breast. they’re so bland and dry, most of the time. ill try chicken but most of the time, unless if it’s fried chicken, it doesn’t taste good to me. so as a “healthier” option, i’ve been cooking chicken thighs! they’re so much juicier and i think soak up flavor much better. (skinless, of course). they also provide higher amounts of niacin, riboflavin, zinc and vitamin b-6, all good things to help with energy conversion! 

my boyfriend and i recently have been loving this recipe. it’s super simple and quick! good for both lunch and dinner, what more could you ask for! … honey mustard chicken!

 HONEY MUSTARD CHICKEN

1/4c whole seed dijon mustard

1/2c dijon mustard

1/4c honey

fresh or dried rosemary

pink himalayan salt (or regular sea salt)

chix thighs (6 small-medium sized ones come in our package we get at TJ’s)

1. Rinse chicken thighs and sprinkle both sides of each thigh with salt.

2. Mix the mustards, honey and rosemary together. 

3. Drench thighs in mustard-honey mix. 

Refrigerate them for an hour or you can put ’em immediately on a skillet with some oil and cook ’em! 

Careful, if there are too many mustard seeds and the heat is too high, they’ll jump out of the pan! 

I like to serve these derricious meaty little chix thighs with a cranberry-goat cheese farro salad (obvi, the farro salad’s not paleo)

 

Gettin through the pain

I dont know how I hurt my back but woke up last Saturday morning with burning pain down my right leg that got worse over the next few days. My MRI explains why im experiencing the pain I am, but I still have no clue how it happened…
The pain was so bad, like excrutiating bad.. I wanted to chop my right leg off to make the pain go away. Then I developed numbness and tingling down my right leg, the outside of it all the way going down and all the way down to my toes/foot. I ended up unable to bear weight on my right foot when the pain was a 10/10 pain. It was miserable. And I think I have a pretty high pain tolerance and even though i work in healthcare, I really don’t like to take medications as much as my boyfriend thinks I do. But the pain was so intolerable, I had to. It was so bad though, I had to get a steroid injection to my spine. I’ve kept a pain diary since the injection to track my progress!image

Today is Day 4 post-injection and I’ve only been having to take ibuprofen (and fish oil to help with inflammation)! YAY! *high fives all around! I’m also able to walk longer distances, but occasionally need to rest. The pain is still the worst in the morning but rather than 10/10.. it’s more like a 5-6/10! And then i start moving and it seems to get better. I still have the numbness and tingling down my leg and in my foot/toes, but at least I can move and do things for myself now. 

I also started working with PT and I can’t wait to get back and be able to get stronger and better. I feel a little more encouraged now that I’m seeing progress. It’s funny because my back never hurt through any of this, it was just my leg.. but now as my leg starts to get better, my back is starting to hurt… but it’s a back pain i’ve experienced before and that has gone away in the past with rest. I’m also feeling more encouraged after reading about Annie Thorisdotter’s back injury. Not that I ever plan on or ever will compete in The Games, but it’s reassuring to know I’ll be able to get back to the gym and throw weight around again. 

Crossfit

I started crossfit about 7 months ago and had started to make some gains.. but I somehow injured my back ..not crossfit related. I’ve had back problems for awhile and had acute exacerbations here and there.. but I woke up Saturday with burning pain down my right leg that just got worse over the course of 3 days.. I started taking pain medicine but wasn’t getting good pain relief. It was to the point there I couldn’t bear weight on my right foot at times. My littler sister’s boyfriend who’s in PT school came over and did some distraction and back extension exercises and I had about 2/10 pain for about 5 minutes until the pain started to come back. I’m to the point where I have numbness and tingling in about 75% of my right foot/leg. I went to go see a PM&R doctor yesterday and he was great. He got me an appointment in for a cortistone injection that same day. I didn’t experience immediate pain relief from the cortistone injection, but I’m hoping it will help. I’m still taking pain meds and trying to do the recommended exercises. I have a PT appointment coming up next week, but I’m out of commission. No work. No crossfit. 

It’s really made it awful. I feel like a burden on my wonderful boyfriend who has supported me so much through all this. I feel completely helpless and I feel hopeless. I’m trying to stay strong through all this, but it’s just so hard especially when the pain is really bad. Everyone says that it’ll go away and everything we’re doing will help, but it’s hard to feel that way when things have just gotten worse.
