Every thursday there’s a local farmers market in Brookline. I ended up buying some of the green and yellow green beans which I just cooked in some olive oil with salt and pepper. I also picked up some peaches which were impressively large and juicilicious!
It was too tempting not to take a picture..all the colors together and the freshness of it all!
Oo cant forget this green zebra tomato! It was harder than a regular tomato and sweeter! I dont even like tomatoes, but really enjoyed this one!
So tried to come up with something different for dinner… came up with turkey meatballs. I thought ground turkey was a lean meat, but my coworker informed me that it’s actually one of the fattiest meats! (I gotta look into that one..) but, anyways! Mixed up ground turkey with some shallots, garlic, and spinach and baked ’em in the oven….I came out with what tasted like crabcakes!
I love crab, but i’ve actually never had a crabcake because I feel like they always have too much butter or fried-ness taste too ’em… so it wasn’t until my boyfriend who’s from Maryland pointed it out.. we ended up sprinkling them with old bay and they were delicious!
Bake them at 400 degrees x 20 min
Wanted to make something I could eat for a few days and that was easy to make! Quiche! You can do anything with it…I put spinach, shiitake mushrooms, nitrate-free bacon, onions and shallots in this one! Topped it with some feta cheese and VOILE lunch for the next three days!
Getting back on the paleo wagon!
Juicy little thighs marinaded in a homemade chipotle sauce! Cant wait to eat it for lunch..
Ive been trying to eat healthy with sweet potato fries and figs and arugula, but my sister is in town and I know there’s no excuse, but we’ve been eating out all our meals… not to mention I hurt my back so I’ve been unable to work out.
..failed that initial paleo challenge. BUT! I did do the Whole Life Challenge for 60 days and that made a huge difference! I was skeptical at first about paying to sign up, but it was probably one of the best things i could’ve done… next to starting cross fit. it was an awesome experience and honestly, everyone should do it at least once.. unless you’re just really disciplined and motivated. You sign up for WLC and you pick either Advanced, Intermediate or Beginner levels. Depending on what level you pick, you have stricter dietary restrictions and limited number of points per day. In addition to the food part, you can earn bonus points by doing the “Lifestyle Challenge” (changes weekly) so you can have a “cheat” food. The lifestyle challenges were actually were good ones too like meditate for 10 min everyday. And even though there were a lot of times when i “cheated”, i’m still so much more aware now of the choices i make. Anyways, it was a great experience.
Cauliflower fried rice
Garlic, shallots, jalapenos, salt, pepper, green beans..
And spoonfuls of homemade guac ..just because
